What Is Tallow?

Tallow is a cooking fat made by slowly rendering animal fat and filtering out the solids. The result is a simple, versatile fat that has traditionally been used in the kitchen for frying, roasting, searing and other everyday cooking methods.

While tallow can come from different animal fats, the type most commonly associated with cooking is made from beef fat. At Stella & Milo’s, we use 100% grass-fed tallow in both our kettle-cooked potato chips and our Cooking Tallow.

 How Is Tallow Made?

Tallow is made through a process called rendering, where animal fat is gently heated until the fat separates from the remaining solids.

  • Rendered

The fat is slowly heated until it melts.

  •  Filtered

The liquid fat is separated from the remaining solids

  •  Cooled

Once filtered and cooled, it becomes the smooth, solid cooking fat known as tallow

It’s a simple process that transforms an ingredient into a versatile fat ready for the kitchen.
